Wierd ignition switch backfire
When I driving along on the old girl and switch on the light, the engine backfires. Does the same thing when I switch the light off.

The old style ignition switches cut power when switching from ignition and no lights, to ignition with lights, and visa-versa.
You can get the same result by riding down the road and leaving the bike in gear, hitting the kill switch for a second or two, and turning it back on. It's unburn fuel in the exhaust that ignites and pops.
I do it passing a non-favoite neighbor's house almost every time I roll down the street. It's even more fun at 70 mph and leaving it off for about 5 seconds.

When I rode my honda, there was a guy with a rice burner who would scream past me on the way home. Rev it up to about 6000 RPM and then cut it off. When he cut it back on, there would be a blue flame about 12" long fire out his exhaust. I figure it can't be good for the muffler?

If it's a muffler with fiber packing it it: No...not good. A steel baffled muffler like SE, it's harmless.
