The main jet sounds way fat for a 95" motor with the cams you're running. And finally, I believe the majority of your problem is with the needle being too lean causing problems in the mid rpm range of operation. Either shimming to raise the needle and richen the mid-range mixture is needed or a whole new needle that would richen the mid-range up.

Too bad you're not local to me as I'm confident I could tune it for the best condition for the 95" application for right around $60.00.

You'd pull it out of the box, bolt it on, adjust the F/A scew 1/4 - 1/2 turn and set the idle speed and ride away trouble free.
Where is the idle speed adjustment on a 40mm CV carb. ?

Hiding under a plug/cap. It needs to be drilled and pulled to gain access.
Do a search

I know this post is two years old, but I'm adding this to it in case someone else comes across this thread doing a search like I did.

I suggest to anyone seeing this to pay attention to the part On the PDF that says, Note the jet needles for the stock carburetor are to short and cannot be used in the big bore 44 mm carburetor.

I tried putting the nokk needle in one today and it was around 3/16 shorter. I knew right away it wasn't going to work. So I did a search for the carb and ran across this post and the PDF I pasted to this.

Good info right there about the stock jet needle being too short for the 44mm CV. Thanks for that !
