First of all, it's "cams" and yes. By changing the lift and duration, the bike's sound will drastically change.
I replaced my stock POS EPA rated Dyna Evo (1995) cam with an SE-1 cam. Sound changed.
I just replaced it again, only with an Andrews EV27, and with more duration and a different overlap, it sounds choppy almost at 1000 rpms to about 1800, but delivers great torque and power.
Your cam duration and lift has EVERYTHING to do with how the bike sounds.
PS: My old, stock N-grind cam is now gearless, wrapped in electrical tape and is my new inner cam bearing installer tool. It also doubles as a great replacement for a roll of quaters if I clock someone that's been asked to leave the garage more then once.
