The reason clutch slipping is initially only noticed in 5th gear is due to the gear ratio/torque difference. In 1st gear, the engine turns a lot, rear wheel only a little, each gear changes the ratio of engine rpm to wheel revolutions. 5th gear there is less rpm's, more wheel revolutions, so the "leverage" difference puts more strain on the clutch.
