I notice that when I look at different maps for my Sportster on my V & H FP3 it doesn't ask for a specific air intake kit. It just asks for Exhaust Manufacturer, Exhaust Name, Baffle Type and Engine Size. Does that mean all big air kits are the same except for their looks?

Pretty much.

Air cleaner kits are actually air "restriction" devices. They don't force air into the motor but instead they regulate the amount of air that the motor can pump in.

Any "Stage 1" kit is going to allow more flow than a stage one motor can suck.
